Probably the most famous Grimm quote is from the episode Season of the Hexenbiest:
Nick: "I guess you don't need to be a Hexenbiest to be a witch."
Adalind: "You don't have to be a witch to work this kind of magic”.
But what really gives it meaning beyond the episode itself, it the statement earlier in the same conversation:
Adalind: “Because, under different circumstances, I think you and I could have really had some fun”.

Two of my favorite quotes happened in season 6, episode 6 (El Cuegle).
Diana turns around and with a sweet innocent smile on her face simply says "You killed him, Daddy." I gotta make that quote into a gif.
Also in that episode (10:18 mark), as Nick and Hank return to their jobs and all the cops are clapping and cheering, and a close up of Wu shows that he is also cheering and he says "Whooooo!" He is basically saying his own name ("Wuuuuu!") and I can't help but wonder if this was simply an ironic moment in the acting and production of the episode, or is it the character of Wu humorously injecting himself into the celebration of Nick and Hank since he also sacrificed, lost, and regained and returned but to seemingly little fanfare.
Basically any Wu joke is a great quote. Anytime he approaches Nick and Hank's desk with some information, I start anticipating a Wu-ism.
I love Wu and Monroe-isms. Best quoters.
I liked when Nick said "For my mother."
